For some reason I’ve never made eclairs before.
I think that’s probably because I’m always trying to be good and a nice fat choux bun full of Chantilly cream and topped with chocolate is something I just cannot resist. If I don’t make them, I won’t eat them – simples!
But, then the other day I just thought I’d have a go and if I eat them all so be it, I’ll just have to get off the tube a stop earlier for a week or two.
I had a look a few different recipes for classic eclairs and the one I decided to follow is from the following book:
THE GREAT BRITISH BAKE OFF: HOW TO BAKE by Linda Collister.
It’s a really straightforward recipe and for a first time eclair maker like me, the result was pretty good.
