Easy Chocolate Cupcakes

On Monday I’m going to be sharing one of the more romantic recipes from Fairytale Food for Valentines Day.

My Prince Charming’s Kisses.

These are gorgeous little Amaretto flavoured chocolates which are dipped in dark chocolate and coconut. They are really quick and easy to make and will make an ideal gift for your Valentine.

 One of the ingredients for this recipe is 6 chocolate cupcakes, so here is my simple recipe for these delicious chocolate sponges. This recipe makes 12 so you can keep 6 for your ‘kisses’ and gobble the rest!


 Easy Chocolate Cupcakes

Cake batter

110g softened unsalted butter

110g caster sugar

2 large eggs

110g self-raising flour

2 tablespoons cocoa powder

1 teaspoon baking powder

2 tablespoons milk

  

  1. Preheat the oven to 190°C/170°C fan/gas mark 5 and fill a 12-hole muffin tray with paper muffin cases.
  2. Cream the butter and caster sugar together until pale and fluffy, then add the eggs one at a time, mixing well.
  3. Sift the flour, cocoa powder and baking powder into a bowl and add to the egg mixture a third at a time, along with the milk, mixing well to ensure that all the dry and wet ingredients are combined.
  4. Spoon the mixture into the muffin tray, filling the paper cases about two-thirds full. Place in the centre of the oven and bake for about 20 minutes, until the tops are springy to touch, or a skewer comes out clean. Leave the cakes to cool on a wire rack.
